Young olives growing happily in the afternoon sunshine in the grove at home in the third week of August. We’ve had a truly biblical storm so the earth is well nourished, and there looks to be a large and bountiful harvest on the way this year. There’s lots of olives and the trees look great!
We’re still a couple of months away from harvest, though. The olives mature and ripen throughout Autumn, but they tell us when they’re ready. We usually pick later, waiting as long as possible, because it gives our Olevo oil its distinctively smooth and rich flavor. There’s much to do until then, too, and hot weather still to navigate.
