The olives are cold-pressed at the local mill at the end of each harvest day and bottled without preservatives or coloring, and not mixed with or added to from any other sources. The groves are cultivated biologically without the use of any pesticides or herbicides, and kept in long grass seeded with herbs and flowers.

The oil has a smooth and moderately fruity taste, with some grassy notes and a slight pungency at the front of the palate. It is excellent as a full flavored cooking oil, and perfect with salads and as garnish or dressing, or on a slice of bread with a pinch of salt.
