Cultivated organically without the use of pesticides or chemicals in small family run olive groves in the rich volcanic region of Viterbo, Italy. The olives are cold-pressed at the local mill at the end of each harvest day and bottled immediately without preservatives or coloring, and not mixed with or added to from any other sources. The oil is made exclusively from the Canino variant of olive tree, which has a smooth and moderately fruity taste, with some grassy notes and a slight pungency at the front of the palate. It is excellent as a full flavored cooking oil, and perfect with salads and as garnish or dressing, or on a slice of bread with a pinch of salt.
