We&#8217;ve had a truly biblical storm so the earth is well nourished, and there looks to be a large and bountiful harvest on the way this year. There&#8217;s lots of olives and the trees look great!<\/p>\n<p>We&#8217;re still a couple of months away from harvest, though. The olives mature and ripen throughout Autumn, but they tell us when they&#8217;re ready. We usually pick later, waiting as long as possible, because it gives our Olevo oil its distinctively smooth and rich flavor.
