By the end of May these will bloom in clusters of beautiful little white flowers, then shed their petals in the summer heat as the fruit grows and the pit forms.<\/p>\n<p>In Autumn the olives mature and ripen. Harvest depends on a number of factors, but we generally work slightly later than others, because we prefer the smoother and richer taste of our oil then.
