Early October, still a month from harvest because we prefer to wait as long as possible, which gives our Olevo oil a distinctively smooth and rich flavor. There is a more complex bouquet of flavors on the palette, fresh but smooth, moderately fruity, slightly pungent, and with the hint of grassy notes.
The trees are healthy and strong, and growing fast after the massive pruning we did in January to open up the center of each tree to the sunlight and direct the branches outwards then upwards. We fully expect this year’s harvest to be smaller, but of exceptional quality. But there are a lot of olives, so who knows…?
