These are long hot days of hard physical work at the farm, but the biological vegetable garden at home thrives and provides, offering us a real bounty of late summer vegetables. There are days when we struggle to find the time or energy to get to it, but she is forgiving, and this crop is healthy and plump salads, corgettes, pumpkins, two types of eggplants, beetroots, bell peppers, and even more fennel.
In our gardens we use only use only natural composts, microbes, and fungi that we make ourselves, and there are no preservatives, emulsifiers, salts, or food dyes in the food we grow for ourselves, that’s on our own table and in our own kitchen, or the oil and food products that we make for our clients. This is what Olevo means for us. It’s a family.
