Olevo is committed to biodiversity and regenerative farming in our groves, gardens, and greenhouses, and this dedication to quality organic food extends to the production process, where our olives are picked by hand and cold pressed pure the same day at the local mill, and our sauces and tapenades are made with our own fresh ingredients without any artificial additives or preservatives.
The olive groves and gardens are cultivated organically, without any pesticides, artificial fertilizers, or chemicals, and kept in long grass seeded with herbs and flowers which encourage biodiversity and enrich the soil. It’s Spring, the cherry tree is in full bloom, and the poppies, the lavender, rosemary, calendula, sage and comfrey and are flowering among the wild grasses and natural herbs.
