It’s been wet and windy and overcast, but rain is excellent, and the mild weather means that the daisies have bloomed early, the grass is growing, the rosemary around the base of this olive tree is happy, and the earth is rich and wet. We keep our groves in long grass and herbs and flowers on purpose; it encourages biodiversity and enriches the soil with natrium, which promotes the natural health of the olive trees.
We did a quick review and the family grove has lavender, rosemary, calendula, fennel, comfrey, sage, poppy, and borago plants in addition to a wide range of natural herbs and wild grasses, and birds and bees and insects busy cross-polinating everything. Cultivated it is not. But what it does do is create a rich and virtuous natural cycle that keeps the whole ecosystem balanced and healthy. And the oil is rich and smooth, slightly fruity with grassy notes, and 100% biological.
