The entrance to the storerooms at the farm, which are modern temperature and humidity controlled refrigerators cut into ancient stone caves behind this building which is set into the hillside terrace below the farmhouse. We’re moving our main olive oil storage site here this year, from our house, as part of a larger reorganisation of our resources.
Our business is growing, in a way that we’re comfortable with, but that also includes a lot of time spent planning and rethinking the way we do things and how to best use the things we have, so moving our storage across town is part of that. But only the first part; there’s more to come!
