A suddenly cold January afternoon in the first grove which surrounds the house and extends up the hill to the large new regenerative garden overlooking Viterbo. Our commitment to organic farming and sustainability includes the way we run the whole property. We mulch prunings rather than burn, the gardens are organic, the groves are pesticide-free, and we use no additives or preservatives in any of our products.

The heating and hot water system in the house on these cold winter days is generated by an integrated combination of our solar panels, wood fire, and natural pellet heater. We add all the kitchen scraps to our compost, start the wood fires with all our paper and cardboard waste, and recycle all our plastics.
