We weren’t kidding about the flowers. These are the saplings in our third grove, late April, kept in long grass seeded with wild herbs, plants, and flowers. We use no pesticides, fertilizers, or herbicides in our groves, which are 100% biological, so a robust natural ecosystem is important.
Herbs and flowers enrich the soil with precious natrium, which keeps the trees strong and heathy, and the insects, birds, and bees that are busy cross-polinating the flowers creates a rich circle of biodiversity that keeps the trees strong and healthy, and the olive oil pure, rich, smooth, and with a range of grassy notes and delicate pungency in the palette.
