Our commitment to organic farming and sustainability extends to our house. Our biological certification requires that we mulch rather than burn our prunings, we use regenerative farming techniques in our vegetable gardens and greenhouses, our olive groves are certified free of pesticides and herbicides, and we use no additives or preservatives in any of our products.

The integrated heating and hot water system in our house is generated by the solar panels on the roof, and by wood fires which come from piles of our heavier olive branches and cheap cast-offs sold locally. We recycle all our plastic, start our fires with the paper and cardboard waste we make, and all the kitchen vegetable waste goes into our compost bins, which end up on the vegetable gardens.
