Much of what we do is manual work by hand so we’ve got lots of tools for all sorts of jobs, and it’s pruning time, so a lot of cleaning up and general maintenance of the health and wellbeing of our beloved olive trees. We’re a small family business, with three groves on the outskirts of Viterbo, Italy. During harvest, too, we pick by hand and with small hand-held battery powered rakes, and sort by hand to select only the best olives free of bruises and imperfections.
We are committed to local business, traditional farming techniques, and organic products, so we tend the groves organically without pesticides or chemicals and keep the groves in long grass seeded with herbs and flowers. We cold press our oil at the local cooperative mill without detergent, additives, or preservatives, and we even bottle and label the oil by hand ourselves as well.
