Very late harvesting in the crisp January sunshine, selecting only the best very black olives free of bruises and imperfection for our new olive tapenade. Harvesting late in the season gives us incredibly smooth and rich tasting olives, which create a soft full pulp perfect for tapenade, which is one of the new products we are releasing later this year along with our truffle sauce and onion preserve!
Harvesting by hand and manual rakes, and using battery powered rakes on long extensions to reach the high upper branches is slow work but a beautiful process; we are putting our hands on our trees, climbing in the branches, touching the very element that forms the fundamental core of our little family business. Sure there’s bottles and labels and packages and couriers and websites and social media, yes, but before all that, it starts here.
