Olevo is pure extra virgin biological olive oil produced from our three small family groves seeded with herbs and flowers in Viterbo, Italy. We produce an exclusive amount of the highest quality oil each year which is certified 100% biological, cultivated organically, hand-picked and sorted, and cold-pressed at the local mill.
Olevo a smooth, rich, and moderately fruity tasting oil, with some grassy notes and a slight pungency. This year’s harvest is out and available and particularly fine. It’s perfect as a cold salad dressing or general table oil, in salad, on bread, with tomatoes, or with cream or cottage cheese and salt. It’s also an excellent full flavored cooking oil for frying or simmering.
