Every harvest day ends here every evening at our local cooperative mill, where the olives are debranched and weighed, washed in plain hot water without detergents or additives, mashed in hermatically sealed, and decanted pure from the first pure cold press into our tanks.
We eat a slice of pizza and talk to the mill workers and fellow farmers delivering their crop, and it’s always a very special process for us – the exact magical moment at the heart of our little family olive business, when the fruit of our trees is transformed into something wonderfully different. It always moves us.
