The last of this year’s harvest, except for the trees we set aside till January for our new olive tapenade recipe. We produce only a small quantity of the highest quality oil each year from our three family groves, and it’s been a good year. The trees are healthy, the weather has been good, and this year’s oil is smooth and rich and fresh.
Olevo is a first pressing cold-pressed extra virgin biological olive oil, grown in Italy, picked by hand, pressed at the local cooperative mill, and bottled by hand. We use no pesticides or chemicals in our groves, and keep the trees in long grass seeded with herbs and flowers. We’re committed to local business, traditional farming techniques, and organic products.
