And so it starts! We have three small family olive groves on the outskirts of Viterbo, Italy, seeded with herbs and flowers, tended organically without pesticides of herbicides, and the whole region is busy now with this year’s olive harvest.
We start in one grove today because the olives are ripe and perfect, and the next ones next week because we’ve assessed that another week in the warm autumn sunshine is what they need for a perfect biological oil.
We work as a family with the help of a few local workers and friends, and cold press the olives at the end of every harvest day at the local cooperative mill without preservatives or additives.
