Olevo’s pure biological extra virgin oil is an excellent full-flavored cooking oil for frying meats or vegetables, or simmering sauces or casseroles. It’s perfect as a cold salad dressing or general table oil as well, on salads, as a hot dish garnish, or even on bread and tomatoes with cream cheese and salt.
Olevo is a smooth, rich, slightly fruity organic extra virgin biological and biodynamic olive oil, very low in acidity, high in polyphenols and vitamin E, and has subtle grassy notes of authenticity and a slight pungency at the front of the palate. We only produce a small amount each year, for ourselves, for family and friends, for a few select restaurants in Rome, and for sale in exclusive amounts on our website.
