Olevo produces a precious single-varietal Canino olive oil, made from a single variety of olive named for the small town north of Viterbo where our family groves are. Our oil is certified 100% biological, tended without pesticides or chemicals of any kind, and kept in long grass seeded with herbs and flowers.
The olives are handpicked late season, and cold pressed at the local mill without soaps, additives, or preservatives, and bottled and labelled by us by hand. The oil is smooth and rich, high in polyphenols and vitamin E, with a few green, grassy notes and a slight pungency at the front of the palate. It’s perfect as a full flavoured cooking oil or cold table oil.
