Early autumn, the olives are ripening, the trees are strong and healthy, and the late summer rains have threaded the soil with the nutrients and natrium from summer’s long grass and flowers.
We pick by hand and with manual rakes every harvest season, which is soon. Harvest depends on the rains and the olives, but it should produce a particularly smooth and rich biological oil this year.
Last year’s excellent oil is still on sale, and even smoother and full flavored after a year in our barrels, but the fresh and grassy new oil should be available some time in October.
