Olevo is a pure, cold-pressed, organic biological and biodynamic extravirgin olive oil grown in Viterbo, Italy on a small family farm. The oil has a smooth and rich moderately fruity taste, very low in acidity, and with high levels of polyphenols and vitamin E, with some grassy notes and a slight pungency at the front of the palate.
It is excellent as a full flavored cooking oil, and perfect with salads and as garnish or dressing, or on a slice of bread with a pinch of salt. We produce a small amount of the highest quality oil each year, and sell to a few select restaurants and private customers, family and friends, and exclusively on our website.
