A row of our older mature Canino olive trees, which produce the full and smooth body of our oil’s taste. When blended with the fresher and grassier notes of the oil from our younger Canino trees it produces the distinctive Olevo taste, which we sell only to a few select restaurants and business in Italy, to friends and family, and exclusively on our website, .
We produce only an small quantity of pure biological and biodynamic extravirgin organic olive oil every year from our two groves on the outskirts of Viterbo, Italy. We use no pesticides or chemicals at any stage of the process, keep our groves in long grass seeded with flowers and herbs to encourage biodiversity, and hand pick and cold press our oil at the local mill, which uses no additives, preservatives, or detergents.
