Halfway through fermentation, the compost we make is an essential part of our farm’s activities and the virtuous cycle of regeneration and biodiversity that is built into everything we do in the vegetable gardens. Our compost bins are for all our kitchen organic scraps, our worm farm gets most of the coffee, and our larger compost pits create the major part of our compost.
The pits collect all our green and brown waste; grass cuttings, dried leaves, bark, coffee grounds, vegetable waste, even failed crops, all crawling with micro-organisms, bugs, flies, worms, caterpillars, and mushrooms. It creates amazingly great compost for the gardens, rich in nitrogen, carbon, and nutrition.
