Late afternoon in the grove after extensive pruning, which is a serious and important investment in the future growth of the trees and quality of the olives. What this does, in effect, is open up the center of each tree to the sunlight and direct the branches outwards then upwards.
This coming year’s harvest will be smaller, and we have accounted for that, but the trees will grow taller and fuller with more air and light between the branches, and dramatically increasing the yield and quality of the olives they produce. It might looks terrible, but it isn’t.
