The Jeep and trailer in the grove, filling up with olives in the late afternoon sunshine before the drive to our local cooperative mill in the early evening, where the olives are debranched and weighed, washed in plain hot water without detergents or chemicals, mashed in hermatically sealed tanks, and decanted pure from the first raw cold press into our tanks or bottled immediately.
We’re committed to local business, traditional farming techniques, and organic products, and every stage of the milling process also is monitored by the men and women of our cooperative mill, who are trusted and experienced professionals with the highest standards backed by generations of family tradition.
