Sorting harvested olives in the nets on the grass in the afternoon sunshine. We discard leaves and branches and other organic matter that falls into the nets, and choose only the best olives for the crates, which go to the trailer, and at the end of every day direct to the mill. We pick and sort by hand, choosing only those olives that are free of any bruises, stains, wounds, and imperfections.
These are the olives that make our signature Olevo extra virgin biological olive oil. Olive from these actual trees in the rich volcanic soil of our grove on the hillside above Viterbo in Italy. Not from anywhere or anyone else. They’re washed in fresh water only and cold pressed at our local cooperative mill at the end of every harvest day, and bottled and labelled and shipped off to our customers by us personally.
