And so harvest begins, first at the farm with a small crew of three working slowly and methodically with battery powered rakes and sorting and selecting the olives by hand. We’ve waited as long as we dared, giving the fruits as long on the trees as they need to ripen while keeping a careful eye on the weather forecasts. The farm has rewarded us with an extraordinary crop this year, too.
This later picking window is perfect. The weather has cleared, and picking only now ensures the full richness and quality of our distinctive Olevo oil. Every day ends with loading the trailer with the day’s harvest and rushing off to the mill, where the olives are washed with fresh water only, cold pressed, and bottled immediately to preserve the freshness of the oil.
