The grove at home, looking down toward the house in the late afternoon sunshine. The days have been almost unbearably hot and dry, and the grass is burning up, but the olive trees are strong and healthy and we’re looking forward to another excellent harvest. When you buy our oil, this is where it comes from; these actual trees on this hillside above Viterbo in Italy, picked and sorted by hand and cold-pressed at the end of every day at the local cooperative mill.
Our oil is certified biological, kept in long grass seeded with herbs and wildflowers, and maintained and pressed without any pesticides, chemicals, or preservatives. It’s literally picked, washed, pressed, and bottled, and the heart of our little family business – the oil and tapenades we make and ship to a growing number of dedicated customers around the world – is based on this simple, pure process. It starts here.
