The olive grove at home, in the hills above Viterbo Italy. June has been hot and dry all month, but we’ve had lots of rain this spring so the trees are strong and healthy and well set up for the summer months to come. We had a record harvest last year, and hope that this year too will be just as good if not even better!
When you buy olive oil from Olevo, this is where it comes from; these actual trees in the mineral rich volcanic soil of the region, nestled around our family home. The groves are cultivated organically without pesticides or artifical fertilizers, we pick and sort the olives by hand, and cold press the oil without preservatives or additives the same day at the local cooperative mill to ensure the freshness and purity of the oil.
