The little shed in the middle of the grove at the farm, surrounded by the last of the wildflowers, which houses two large rolls of hay that we use in the regenerative gardens. Our products are 100% biological and use only organic composts and mulch which we make ourselves. Covering the earth with a thick layer of hay locks in the moisture in our increasingly dry and hot weather, and promotes the soils’s rich natural ecosystem of microbes and bacteria.

All our products and raw ingredients are grown in fresh air and real earth without any pesticides, preservatives or chemical agents. It underlines our commitment to Italian farm grown products of the highest standards in quality and taste, and reflects the principles that we have always used and are now applying to the farm property as well. These are exciting times.
