We’re working fast at the farm now because it’s getting hot, which means that we have to change the hours we work to avoid the warmest part of the day. There’s still much to do, but much that is done, and with the irrigation and electricity pipes now checked in the grove and the last of the fencing removed, we can turn the earth and let it settle and admire the grove as we planned it.
Integrating the farm with the Olevo business adds approximately 60 trees to our collection, but the oil they produce has its own distinct flavour different to our own trees – more mellow and smooth, a warmer and more oily taste on the palette – so we will always keep it separate from the principle flagship Olevo oil line. It’s its own thing, still special, but different, and we have all sorts of plans for it…
