Spring in the grove. The wild grasses and herbs are knee high, and the flowers are in full bloom. Not only is it pretty, it’s an important period in the virtuous cycle of biodiversity that we deliberately maintain in our olive groves. We cultivate the groves organically, not using any pesticides, artifical fertilizers, or chemicals, and the herbs and flowers and wild grasses are rich in natrium which enriches the soil and promotes the health of the trees.
These principles extend to the production of our oil. We pick and select the olives ourselves by hand and using battery operated manual rakes in an old Italian tradional methos of harvesting called ‘abbacchiatura,’ and cold-press the oil without preservatives or additives the same day at our local cooperative mill, ensuring the quality and integrity of the oil pressing, and the freshness of the oil.
