Discussing our oil, bottling, schedules, and certification at one of the three cooperative mills we now use as our little family business expands. This is where the best of our olives are debranched and washed in hot water only, mashed, cold pressed in hermetically sealed steel tanks that preserve the rich natural aromas and organic compounds, and finally spun in centrifuges and decanted in a unique process that creates pure oil without any added water.
This is our oil; pure, biological, cold-pressed, extravirgin, 100% Italian olive oil of the highest quality. And every stage of this magical process is monitored and certified by the men and women of the mill, trusted and experienced specialists with generations of knowledge and family tradition. We produce only a small quantity of the highest quality oil each year from our family groves, and sell it exclusively on our website.
