It’s a record-breaking harvest for us this year. It looked good, we were confident, but you never can tell until you actually start. The olives are extraordinary this year, in part, we’re sure, because of the extensive pruning we undertook last year. Perfectly shaped little Canino’s, plump, richly colored, and picked at the perfect time to make our signature monocultivar biological olive oil.
This is part of the first day’s harvest, which we hook up to the Jeep and rush to the cooperative mill at the end of every day to cold-press and bottle immediately. This preserves the freshness and integrity of our oil, with every step planned and executed to produce the purest, highest quality, extra virgin Italian biological olive oil.
