We are still a few weeks from harvesting, because we prefer the smoother and richer taste of our Canino oil then. There is a more complex bouquet of flavours on the palette, fresh but smooth, moderately fruity, slightly pungent, and the hint of grassy notes. This works for us, and it makes our oil distinctive and of the highest quality.
The trees are heathy after substantial pruning a year ago, the weather is good, and we are looking forward to a generous harvest this year. It produces the extra virgin oil that forms the core of our little family business; the oil itself, our fabulous preserves, and our soaps.
