A wonderful two day course held in Viterbo by Dario Cortese of livingsoilgarden, who shared his insight, knowledge, and experience of the regenerative no-till no-dig farming method. It involves the least disturbance to the soil and its rich natural ecosystem of microbes and bacteria, covering it with manure and dark plastic for months, then putting down a thick layer of compost, planting with homemade natural fertilizer, and covering the beds with hay.

These are ideas we have explored and worked on in the last few years, and we develop our vegetable gardens and techniques producing the raw produce for our new product lines and food for our family. Learning more from great teachers like Dario reflects our commitment to the land, to traditional farming and organic products, and to developing the best quality products for our friends, family, and customers.
