Saplings in our third grove north of Viterbo, a work in progress that’s part of our expansion plans, but something of a struggle. We’ve had to dig a very deep well to get them the water they need during the drought of the last few years in Italy, and we had a fire last year, which was a challenge. But the land itself is excellent, rich and nutritious, so it’s worth persevering and being patient.
Olevo is a small family business. We have a farm and greenhouses, gardens and olive groves, growing children and too many cats. We produce a small quantity of the highest quality 100% biological olive oil each year, in long grass groves without pesiticed or chemicals and seeded with herbs and flowers. We sell to a select number of exclusive restaurants in Rome, to family and friends, a few exporters, and on our website, . It’s the oil on our own table, too, otherwise what’s the point?
