Our local mill, a harvest day’s load of olives sorted by hand, debranched, washed in hot water without soaps, then mashed and cold pressed without water to create our pure, distinctive biological and biodynamic olive oil. We store the oil in our hermetically sealed steel tanks, and pour and label each bottle ourselves, by hand.
We are committed to local business, traditional farming techniques, and organic products, and use no herbicides or pesticides in our groves, nor any additives or preservatives in our oil. We produce only a small quantity of the highest quality oil each year from our three family groves, and sell to a select number of exclusive restaurants in Rome, to family and friends, and only on our website.
