Olevo is a pure cold pressed extra virgin Italian olive oil, and is an excellent, full flavored cooking oil for frying or simmering, or as a cold salad dressing or general table oil. It has a smooth, rich, and moderately fruity taste, with some grassy notes and a slight pungency at the front of the palate, and is made from a single precious variety of Canino olive tree in our two olive groves on the outskirts on Viterbo in Italy. It’s is the oil on our table at home.
We’re a commited local small business, believe in responsible and sustainable biological farming, and produce only a small amount of the highest quality oil each year, which we sell to a few exclusive restaurants in Rome, to family and friends, and on our website.
