Olevo is pure extra virgin biological olive oil from Italy, 100% certified biological, cultivated organically, hand-picked and cold-pressed at the local mill without preservatives or chemicals. Our groves are a single varietal Canino olive tree, which produces a smooth, rich, and moderately fruity tasting oil, with some grassy notes and a slight pungency at the front of the palate.
It’s low in acidity, high in polyphenols and vitamin E, and is an excellent, full flavoured cooking oil for frying or simmering, and perfect as a cold salad dressing or general table oil, on bread and tomatoes with cream or cottage cheese and salt, even honey. We sell a small amount each year to an number of exclusive restaurants in Rome, to family and friends, and on our website.
