Our first grove in the fresh air and rich volcanic soil in the hills outside Viterbo, Italy; the basis of our little family olive oil business, and one of three groves we have in the area.
We tend the groves organically without pesticides or chemicals, pick by hand and with manual rakes every harvest season, and cold press our oil without preservatives or additives at the end of every harvest day at the local cooperative mill.
Mid summer the olives are baking in the sun, still unripe and growing, heading towards harvest in the autumn, but the trees are strong and sturdy and their roots are deep, and this is all part of the normal life cycle of traditional organic farming.
