Olevo is a smooth, rich, slightly fruity organic extra virgin biological and biodynamic olive oil produced on our small family farm in Viterbo, Italy. Our oil is very low in acidity, high in polyphenols and vitamin E, and has subtle grassy notes of authenticity and a slight pungency at the front of the palate.
It is an excellent, full flavoured cooking oil for frying or simmering, and perfect as a cold salad dressing or general table oil, on bread and tomatoes with cream cheese and salt. We only produce and a small amount each year, for ourselves, for family and friends, for a few select restaurants, and for sale in exclusive amounts on our website.
