Mid summer the olives are baking in the sun, still unripe and growing, heading towards harvest in the autumn. The long grass and wild flowers have died in the heat, but the trees are strong and sturdy and their roots are deep, and this is all part of the normal life cycle of traditional organic farming; the autumn and winter rains will thread the soil will the natrium and nutrients it needs to support healthy olive trees.

We own and manage two groves on the outskirts of Viterbo, Italy, and produce an exclusive amount of pure biological and biodynamic extravirgin olive oil each each year which we use ourselves, sell to family and friends and a few select restaurants, and on our website, . Harvest is late September/October, but we STILL have a particularly fine, ripe and rich oil available from last year’s harvest available and on sale.
