We believe strongly in the importance and value of small local business and responsible and sustainable biological farming. We cultivate the groves organically without using any pesticides or chemicals, and we keep the fields in long grass seeded with herbs and flowers which encourages biodiversity (we have rabbits and butterflies!) and produces natrium, which is an important natural element for the robust and healthy trees.

We hand pick the olives ourselves, and cold-press the oil immediately on the day of harvest at the local mill with no additives or preservatives of any kind. We even bottle and label the oil ourselves, too.
