Olevo is a precious Single Varietal olive oil, of which there are not many, meaning that it is the purest form of oil pressed from just a single particular type of olive tree. It has no additional flavors, isn’t mixed with any other oils, and is a first pressing cold-pressed extra virgin olive of the highest quality.
Olevo is made exclusively from the Canino type of olive, named for the town just north of Viterbo where we are, where olives have been grown for thousands of years in the rich volcanic soil of the region, and which is renowned as a smooth and rich oil with a well-balanced taste of bitter and spicy notes, very low in acidity, and with high levels of polyphenols and vitamin E.
