Olevo is a small family farm with two Canino olive groves on the outskirts of Viterbo Italy. During harvest, we hand pick and sort the olives ourselves, and transport them at the end of every harvest day to the local mill, where they are washed in plain hot water, mashed in hermatically sealed tanks, and cold pressed and decanted into our stainless steel drums.

There are no detergents, additives, preservatives, or pesticides used at any stage of the process. We are proud organic farmers, committed to biodiversity, and tend our olives in long grass seeded with herbs and flowers. We only produce a small amount of our oil every year, which we use ourselves, gift to friends and family, and sell at local markets and exclusively on our website.
