The olives are cultivated organically, without any pesticides or chemicals, and cold pressed and bottled on the day of harvest without preservatives, colorings, or additives.

The oil has a smooth and moderately fruity taste, with some grassy notes and a slight pungency at the front of the palate. It is excellent as a full flavored cooking oil, and perfect with salads and as garnish or dressing, or on a slice of bread with a pinch of salt.
